A 100% natural substitute for Guar gum

AIT Ingredients is launching VitalGlucane H+, a new 100% natural ingredient, that improves water take-up by dough and pastry, at appreciably lower cost, and has a proven health benefit.

Beta-Glucans are soluble plant fibres with the particular feature that they confer significant water absorption power. Ingredients in the VitalGlucane range are obtained from specially selected barley varieties by the selective abrasion of barley grains, in order to isolate the layer richest in Beta-Glucans.

This ingredient can be used in particular as a substitute for Guar gum, whose price has recently rocketed. Depending on the application, most often in dough, pastry or pasta, it is estimated that using VitalGlucane H+ can be 3 to 4 times more economical.

In addition, Beta-Glucans are acknowledged for theirhealth benefits, as they are the only soluble fibres that are officially entitled to the claim that “eating them regularly contributes to maintaining a normal blood cholesterol level”. The quantity of Beta-Glucans that needs to be incorporated to make the claim is 3g/day.
